Eating more vegetarian meals can benefit our planet. But eating a balanced vegetarian meal it's not so easy! One good idea is to combine grains and legumes to get a complete aminoacidic range which forms protein 🌱


Ingredients x2: 150g cous cous 300g boiled chickpeas 1 pepper 1 zucchini 1/2 onion 2 handfuls of sprouts 4 tbsp olive oil Fresh basil Salt

Procedure: Prepare the cous cous by mixing it with a tablespoon of olive oil and then pouring hot water on it. The water should just cover the cous cous, not exceed. Prepare the vegetables by washing and cutting them in cubes. Add onion in a pan with a tablespoon of olive oil, cook with the lid on low flame, then add peppers and after few minutes the zucchini. Cover with lid on medium flame. In the end add salt, sprouts and cous cous, stir well and serve with additional 2 tablespoons of olive oil and basil.
