Carrot cake - healthy, delicious ... just perfect!

Ingredients: 1.5 cups grated carrot (about 3-4 carrots) 1.5 cups flour 4 eggs (vegan version e.g. 2 cans of aquafaba) 1 cup oil 1 cup of honey (vegan version e.g. sate syrop) 1 teaspoon cinnamon 1 teaspoon gingerbread spice (can be omitted) 1 tbsp vanilla sugar 1 cup chopped walnuts

Preparatory steps:
Grate the carrot with a fine mesh. Walnuts chopped or crushed into small pieces. We set the oven to 180 ° C and start with the dough. Beat eggs with a mixer with sugar and vanilla sugar for about 3 minutes. We slowly start adding oil - the dough will absorb everything during mixing. Continuous whipping, gradually add flour mixed with salt, powder and soda. The dough is to be thick. We add cinnamon and gingerbread spice. Finally, pour in the carrots and nuts and mix for the last time. The mold (preferably a 26 cm dough mold, can be with a chimney) is greased or lined with baking paper. We pour the dough and bake for about 45-55 minutes. (best to check with a stick).
