Autumn PUMPKIN SOUP!

The Autumn Pumpkin Soup: •Cleaned and peeled pumpkin • shaved carrot • few potatoes • bread • spices of choise (ginger, onion, garlic, pepper, sage, thyme) • cheese of choise (could be permazan, brie or blue cheese)

Pumpkin, like all squash vegetables (including zucchini, watermelon, melon), is a rich source of many nutrients. It has many beneficial health properties. Pumpkin flesh is characterized by an interesting and unique chemical composition, and thus a high nutritional value. It contains a small amount of basic ingredients (protein, fats, carbohydrates), while a relatively large amount of vitamins and mineral salts.

Either boil or cook vegetables in the oven with olive oil until tender. If using onion or ginger fry it until golden. Combine vegetables and spices (you can squeese a bit of lemon if you want) and purée them with a blender. Cut the bread into slices and fry them with a bit of olive oil until crispy. Add garnishes: olive oil, cheese and herbs.
